Egg Rolls
INGREDIENTS:
1 pack of Chinese egg roll skin (
25 PCS.)
1/2 C. Ground pork
1/2 C. Shrimp ( shelled)…….marinate
with cornstarch & salt ( or Hondashi)
1C. Bamboo shoot ……….. boil &
cut into strings ( along the grain)
1/2 C. Dried black mushroom….soaked
soft, cut into fine strings
1 large Napa Cabbage…………..cut into
strings
1/2 C. White leek ( optional)……..cut
into 1” sections
SEASONINGS:
Salt, Pepper, Cornstarch( mix with
water into a thick paste)
Flour paste ……..for sealing the egg
rolls,make it thick easier to seal
Procedure:
1. Heat 3T. oil to stir fry ground
pork and shrimp till color turns red,
ad black mushrooms,stir fry till aroma
comes out, add napa cabbage, add seasonings,
mix & stir for about 2 minutes
ONLY,finally pour slowly the cornstarch
paste to mix all . pour into a container
& mix in the white leek.
2. put 1 1/2 T. of stuffing on center
of an egg roll sheet, wrap and fold,roll
into a cylinder,seal with flourpaste.
3. Deep fry in hot oil till golden
brown.
Gong-Bao Chicken
INGREDIENTS
Chicken legs ………..boneless, dice,marinate
with soysauce & cornstarch
Green & Red Bell pepper……….diced
1/4 C. dried Red chili…………1” sections
1/2 T. Garlic…………………..chopped
1/2 C. toasted Peanuts ( or other
nuts)
SEASONINGS
1T. Soysauce,1/2T. Sesame seed oil,1t.
Vinegar,1t. sugar,1t. water, 1t. Cornstarch
.( mix into a bowl)
PROCEDURES
1. Deep fry chicken in 3C. Very hot
oil for 1 minute, drain dry.
2. Pour out oil, use the remaining
oil to stir fry garlic,dried red chili,
then add bell pepper and chicken,stir
fry and mix in the seasonings ,quickly
stir well and sprinkle the peanuts.
Shrimp in Lettuce Wrap
INGREDIENTS
2C. Shrimp….shelled, devine, cut into
pcs. marinate with cornstarch &
Salt (Hondashi)
1/2C. Macadamia nuts (slightly chopped)
1/4 C. Water Chestnuts ( canned, minced)
1/4 C. frozen Snow peas
1/4 C. Onion…………minced finely
1/4 C. Go-Jih ( Chinese herbal medecine,taste
like raisin)
SEASONINGS
1T. Soysauce, 1/3 t. Vinegar, 1t.
Sesame oil, pinch of pepper, 1/2t.
water, 1/2t. cornstarch ……….( mix
in a bowl)
PROCEDURE:
1. Deep fry shrimp in hot oil for
1/2 minute,drain.
2. Pour out oil, use the remaining
oil to stir fry onion,water chestnuts
,add shrimp,snow peas and seasonings
in, mix well, finally add Go-Jih,nuts,and
pour onto the plate.
** You may deep fry Mung-bean strings
( pronounced Fung-Su) in very hot
oil till pop up as bottom garnish).
Or deep fry the boiled spegahetti.
** cut off center of a head of lettuce,
soak in water, and it’ll be easier
to peel each leave off.
